The protein content is the highest of all wheat, about 13-17%. Wheat kernels last wonderfully well, but once ground, the nutritious oils in whole wheat are quickly oxidized by air, so store whatever flour you don't use immediately in an air-tight container in the freezer. The kernels can be used for sprouting (wheat grass), for cracked wheat for a hot cereal or for breads and pastas. Biologically grown, Non-GMO.
