Instead of Macaroni and Cheese

Broccoli Quinoa
Do this instead of packaged macaroni and cheese when you are in a hurry. This is super nutrition: quinoa is so unusual and delicious, plus is a supergrain nutritionally. Broccoli is power packed with vitamins and minerals. Look for quinoa in the bulk section of your health food store. It is expensive but worth it in taste, nutrition and quick cooking time. My kids love it.
2 cups quinoa
4 cups water
1 bunch broccoli (3 stalks)
1/2 cup cheese
Put quinoa in a cooking pot and add water to rinse very well. (Quinoa has a natural soapy coating that must be rinsed off). Pour through a strainer, catching the quinoa. Put back in rinsed out pot. Add 4 cups water and bring to a boil. Lower heat and simmer for 15 minutes, until quinoa is tender. You can tell when it is done because the little fibrous "c" shaped thread separates from the grain. Wash and chop broccoli. Steam while quinoa is cooking. Stir together cooked broccoli, cooked quinoa and grated cheese.
