Brown rice is the most nutritious grain we commonly eat! It is chock full of nutrients, including healthy oils. What is the difference between white rice and brown rice? All rice is brown rice, until it is processed to remove the outer coating. Unfortunately, most of the nutrients are lost in the milling or polishing, which removes the bran (including cholesterol lowering oils), and the endosperm. For myself, I much prefer the nutty taste of brown rice. Nutritionally, brown rice is far superior and will add to your family's good health. For long term storage (more than 6 months), keep rice in the freezer. Because it is rich in healthy oils, it can go rancid if left for more than a few months at room temperature. To cook brown rice, just put the rice in a cooking pan with twice the amount of water. Cover and cook on medium heat for 45 minutes. Do not stir, do not lift the lid. Ta-duh! Perfect brown rice!
