view | Natural Brown Rice, 20 lb bag Brown rice is the most nutritious grain we commonly eat! It is chock full of nutrients, including healthy oils. What is the difference between white rice and brown rice? All rice is brown rice, until it is processed to remove the outer coating. Unfortunately, most of the nutrients are lost in the milling or polishing, which removes the bran (including cholesterol lowering oils), and the endosperm. For myself, I much prefer the nutty taste of brown rice. Nutritionally, brown rice is far superior and will add to your family's good health. For long term storage (more than 6 months), keep rice in the freezer. Because it is rich in healthy oils, it can go rancid if left for more than a few months at room temperature. To cook brown rice, just put the rice in a cooking pan with twice the amount of water. Cover and cook on medium heat for 45 minutes. Do not stir, do not lift the lid. Ta-duh! Perfect brown rice! Grind brown rice into flour to make the crispest, lightest, most nutritious and delicious waffles you ever tasted! Try my Wonderful Waffles recipe! (from my Hopkins' Healthy Home Cooking cookbook).

view | Organic Alfalfa Sprouts, 8 oz bag Alfalfa sprouts are what people typically think of when you mention sprouts, the ones you commonly see at a salad bar. Rich in phytochemicals, they protect against cancer, heart disease, osteoporosis and fibrocystic breast disease. They stimulate natural killer cell activity, which strengthens the immune system. They are beneficial in reducing symptoms of PMS and menopause, including hot flashes. Containing high concentrations of antioxidants, the body's defense against the destruction of DNA which is the cause of aging, alfalfa sprouts are abundant sources of vitamins A, B, C, E and K, the minerals calcium, iron, magnesium, phosphorus, potassium and zinc. Also carotene, chlorophyll, amino acids and trace elements. They contain 35% protein.
This 8 oz. package of organic alfalfa seed produces 5-7 pounds of sprouts.

view | Stainless Steel 4-quart Pressure Cooker 14% OffHere's the real ticket to "fast food" without guilt—it is even faster than a microwave for some foods. I don't know how I'd get along without my pressure cooker! This is a one-time investment that will last your entire cooking career. Cook healthy, flavorful meals in one tenth of the time, saving time, energy and fuel costs! You'll save 70% of the energy normally used on cooking a meal, plus keep your house cooler in the summer or use less fuel in case of emergency. You can also save money by purchasing less tender cuts of meat, as pressure cooking tenderizes meats, as well as preserving flavors and nutrients. This 4 quart size is ideal for daily use, as it is large enough to make potatoes for a family of 8, or cook up a batch of chili. This is top quality stainless steel from the Presto company with a special bi-metal base to ensure even heating. Comes with a 64 page instruction and recipe book. Includes special round rack for cooking several foods at once without intermingling flavors. 12 year warranty. An investment well worth making! Rated #1 by the American Culinary Institute!
Note: I do not recommend the cheaper aluminum pressure cookers. Aluminum is not safe to cook in, especially with acidic foods such as tomato based soup or chili, as it leaches aluminum into the food. Choose stainless steel for excellent health and a very quality, top-performing pressure cooker.

This is instant yeast, meaning you use less than regular yeast, and add it to the flour (rather than in water). One bag lasts me through hundreds of loaves of home-baked bread. view | Country Cream 100% Real Instant Nonfat Milk, case of 6-#10 cans Here's the best tasting dry milk on the market! Stash some away in your pantry just in case. This dry milk is made with a low heat process, retaining the good taste—just like skim milk from the grocery store. Just add water, and it mixes instantly!
I prefer to drink raw milk (rather than dry milk or grocery store milk) but I don't want to cook my raw milk, in effect pasteurizing it. So when I cook, I always use dry milk. Super easy and convenient, always on hand.
Packaged in premium #10 cans, that have been enameled to protect against rust on the outside and to retain freshness. When stored in a cool dry place, our milk will be stable for as long as ten years without loss of flavor and little loss of nutrition. Wonderful to cook with as well as make cheese and yogurt. You can make 5 gallons of gourmet tasting milk out of one can!

view | White Wheat, 45 lb in Sturdy Bucket Ooh, you are in for a treat if you have never used white wheat before! This high protein wheat berry grinds into a light colored whole wheat flour that rises higher and is lighter and tastier than the traditional "turkey red" wheat. Because it is lighter, I have been able to use whole wheat flour for hamburger buns, pizza crust, cinnamon rolls and noodles. Your bread will bake to a delicious golden brown color. Your family will ask if you are baking with white flour again!
Perfect for long-term storage, our white wheat has been packed in an oxygen-removed sturdy bucket, 45 lbs. of it. Will last in storage for 30+ years, so you'll never go hungry. I am baking bread from my storage wheat that is quite old, and the wheat is still fresh and makes fabulous bread!
The protein content is a high 12-16%. Wheat kernels last wonderfully well, but once ground, the nutritious oils in whole wheat are quickly oxidized by air, so store whatever flour you don't use immediately in an air-tight container in the freezer.
We use a bucket opener (above) to easily remove the lid each time we use it.

view | Red Wheat, 45 lb in Sturdy Bucket Traditional red wheat is perfect for long-term storage and has been packed in an oxygen-removed sturdy bucket, 45 lbs. of it. Will last in storage for 30+ years, so you'll never go hungry. I am baking bread from my storage wheat that is quite old, and the wheat is still fresh and makes fabulous bread!
The protein content is the highest of all wheat, about 13-17%. Wheat kernels last wonderfully well, but once ground, the nutritious oils in whole wheat are quickly oxidized by air, so store whatever flour you don't use immediately in an air-tight container in the freezer. The kernels can be used for sprouting (wheat grass), for cracked wheat for a hot cereal or for breads and pastas.

view | Spelt Berries, 45 lb in Sturdy Bucket 10% OffWhat's spelt?! Spelt was an important staple in parts of Europe from the Bronze Age to medieval times. Spelt is an ancient grain that resembles wheat, but does not have the same high gluten content. Spelt has a tougher husk than wheat, which may protect the nutrients better. Spelt has a somewhat nuttier and slightly sweeter flavor than whole wheat, and contains more protein than wheat. Spelt protein is easier to digest than wheat protein, so many people can tolerate spelt products even if they are allergic to regular wheat products. Spelt has less calories, but more niacin and riboflavin than wheat. I like to add spelt to my diet as a break from wheat, plus it has unique nutrition that makes it a quality food!
Use spelt flour to replace whole wheat in your recipes, and I doubt you'll be able to tell a difference! Spelt can be sprouted to add to soups or salads. It can also be milled into flour and made into bread. Use my favorite bread recipe with this modification: knead the bread dough gently (by machine on the lowest setting) for just 5 minutes. The bread dough will feel like silly putty (sorry, that's the best description I can come up with!) Continue with the recipe and your end result will be delicious nutty tasting spelt bread. My family cannot really tell it apart from wheat bread!
Our spelt berries have been packed in an oxygen-removed sturdy bucket, 45 lbs. of it. Will last in storage for 30+ years.

view | Old Fashioned Oatmeal, 25 lb in Sturdy Bucket 10% OffWhy store oatmeal? It is a natural "fast food", can be eaten raw, cooked, or added to foods (cookies, pancakes, breads, meatloaf, muffins, etc). It is ready-to-use and full of healthy fiber. Besides, most everyone loves it. Top with some honey for a delicious meal.
This is old-fashioned (not instant) oatmeal. The whole grain is lightly heated (enzymes are not destroyed) and rolled flat. To cook, just add 1 cup oatmeal to 2 1/2 cups boiling water. Turn heat to low and let simmer for 5-10 minutes. I remarked to my husband that if we just had dry milk, honey and oatmeal, we could probably feed everyone for pennies, without much cooking or much complaining—yum! This bucket contains 25 lb of regular oats.

view | Beans, Pinto, 25 lb bag Nutritious and filling, beans are a mainstay in any food storage program. I add beans whenever I can to salads, soups, casseroles, and more to add nutrition! They can also be ground in your grain mill to make "bean flour" that can be whisked into boiling water to make instant refried beans.
Here's the easy way I cook beans:
Rinse beans and put (any amount of beans) into a pressure cooker. Add water so it stands 3" above the beans in the pot. Put lid on and heat over high heat. When pressure cooker comes to pressure and the pressure cock starts "rocking" steadily, then reduce the heat to medium high (keep it high enough to make the pressure gauge at 15 or the pressure cock rocking) and put your timer on 35 minutes. When the timer rings, run the pan under cold water until the pressure is gone. Open the lid and serve.
You can cook beans on the stovetop by covering with water and boiling gently for up to 2 hours. Soaking overnight beforehand will reduce cooking time.

view | Dent Corn, 20 lb in Sturdy Bucket Dehydrated yellow corn kernals can be ground into fresh, whole grain cornmeal with the germ (not degerminated as found in the grocery store) to be used in cornbread, soup or tortillas. This is not the sweet corn found in cans at the grocery store, but field corn which is a staple grain, and one of the most cultivated crops around the world. Most of the corn crop in the USA is yellow dent corn. It gets its nickname from a depression or dent in the crown of the large kernel. Of the cereal grains, dent corn contains the highest content of carotene (vitamin A). Will store up to 30 years below 75 degrees Farenheit. See recipes for using dent corn, including how to make your own parched corn, Navajo Soup and Corn Nuts here.

view | Raw Honey, 5 lb 10% OffRaw alfalfa honey, light amber in color. Has not been heated over 110 deg F in processing. The honey may crystalize, or already be crystalized which happens with all raw honey. The honey can be scooped out for use or melted slowly to preserve its enzymes. To melt again, simply place the container (without the lid) in a pan of water warmed over the stove at very low heat. We place several canning lids between the container and the metal pan. Comes in 5 lb plastic jug containers with a screw-top lid. Honey also has medicinal qualities that make it good for your food storage program. Honey is still used for wound healing today for those who cannot tolerate antibiotic creams. Honey has also been used for centuries as a treatment for sore throats and coughs, and according to recent research may be more effective than most common medicines.* Just mix lemon juice and honey and and take to coat the throat reducing pain and help in healing. A recent study has shown that honey also reduces allergies. ** Grocery store honey has been pasteurized, which cancels its healing properties. Most have sugar or water added to keep the honey free flowing. Raw honey will thicken in time (about 2 months) but it does not effect its properties. It is, in fact, a way that you can be sure you have real raw honey! (Note: wait until infants are a year old before introducing honey.) *The Guardian Society 04/12/2007 "Honey 'beats cough medicine'". Click here.

Features and Versatility
The Wonder Junior Hand Grain Mill has amazing features at a very reasonable price. The whole mill is powder-coated making it safe to wash for easy clean up. The hopper is large and holds over one quart. The octagon shape of the hopper makes it easy to fill. And because the Wonder Junior is one-piece construction you don't have to worry about the hopper coming off during milling like many other hand grain mill models. One of the greatest features of the Wonder Junior is its heavy-duty patented double clamp (Deluxe model only). It attaches to tables or counters up to 2 inches thick. And once you clamp it down it never moves like other hand grain mills on the market that loosen up and shift around while turning the handle. The Wonder Junior Hand Grain Mill uses extra large lifetime lubricated bearings and it has a heavy base that can be bolted to any table or counter.
Note: there are two models of the Wonder Junior Hand Mill: The Deluxe model includes stones, clamp and stainless steel burrs. The Basic model include stones only and does not include the clamp and burrs.

It is amazing how stressful life can get when you are "out of bread" . . . . right?! You can make fabulous whole wheat bread in less time than a grocery shopping trip. Use for small amounts, or large—you can whip out several loaves quickly as this incredible mixer makes 15 lbs. of dough that is smooth and elastic for the perfect bread texture. The Electrolux includes a unique "roller and scraper" (my favorite tool for bread making), a dough hook, plastic bowl and double beater whisks, along with the heavy-duty extra large stainless steel bowl. It takes 5 min. to dump in the ingredients and when the kneading is done, the machine clicks itself off, which means you can get it started and walk away! view | Food Dehydrator 25% OffDrying is one of the very best ways to store food, retaining high nutrition and taking little space to store. I find it so convenient to cook with dried foods, too. I keep them in canisters on my counter, and use them when I am in a hurry. Just adding a handful of dried carrots and onions to soup, sauces or cooking rice is a simple way to add good nutrition without the time it takes to chop raw veggies. Plus, I am never out of "fresh produce" even if I don't have carrots in my fridge.
I've looked at the dehydrators on the market, and this is my first choice. This dehydrator has some great features! The 500 watt, top mounted fan dries faster with more power with great results in hours, not days. Patented Converga-Flow drying action provides even heat distribution, no need to rotate trays or worries about flavors mixing. Adjustable thermostat is my favorite feature because I don't want to cook or "kill the enzymes" (drying at 105 degrees keeps it raw) in the food I am drying. This dryer allows you dry at any temperature between 95 and 155 degrees. Comes with 4 drying trays, plus a fruit roll sheet and jerky packets so you can cure and flavor meat that you dry. You can expand your dryer all the way up to 12 trays at time as the drying pressure automatically adjusts the the number of trays.

Hi!
I am Diane Hopkins, mother of 7 children (ages 14 to 34) whom I have had the privilege of homeschooling over the past 23 years. I'm a mom, just like you, and have those fabulous days and those not-so-good days like we all do. My hope in writing is to share experiences, and hopefully we can encourage one another in this wonderful, intense adventure of childraising--that is really what homeschooling is, after all.
Hoping to help, if I can!
Love, Diane
