Natural Brown Rice, 20 lb bag 

Brown rice is the most nutritious grain we commonly eat! It is chock full of nutrients, including healthy oils.

What is the difference between white rice and brown rice? All rice is brown rice, until it is processed to remove the outer coating. Unfortunately, most of the nutrients are lost in the milling or polishing, which removes the bran (including cholesterol lowering oils), and the endosperm. For myself, I much prefer the nutty taste of brown rice. Nutritionally, brown rice is far superior and will add to your family's good health.

For long term storage (more than 6 months), keep rice in the freezer. Because it is rich in healthy oils, it can go rancid if left for more than a few months at room temperature.

To cook brown rice, just put the rice in a cooking pan with twice the amount of water. Cover and cook on medium heat for 45 minutes. Do not stir, do not lift the lid. Ta-duh! Perfect brown rice!

Spelt Berries, 45 lb in Sturdy Bucket  10% Off

What's spelt?! Spelt was an important staple in parts of Europe from the Bronze Age to medieval times. Spelt is an ancient grain that resembles wheat, but does not have the same high gluten content. Spelt has a tougher husk than wheat, which may protect the nutrients better. Spelt has a somewhat nuttier and slightly sweeter flavor than whole wheat, and contains more protein than wheat. Spelt protein is easier to digest than wheat protein, so many people can tolerate spelt products even if they are allergic to regular wheat products. Spelt has less calories, but more niacin and riboflavin than wheat. I like to add spelt to my diet as a break from wheat, plus it has unique nutrition that makes it a quality food!

Use spelt flour to replace whole wheat in your recipes, and I doubt you'll be able to tell a difference! Spelt can be sprouted to add to soups or salads. It can also be milled into flour and made into bread. Use my favorite bread recipe with this modification: knead the bread dough gently (by machine on the lowest setting) for just 5 minutes. The bread dough will feel like silly putty (sorry, that's the best description I can come up with!) Continue with the recipe and your end result will be delicious nutty tasting spelt bread. My family cannot really tell it apart from wheat bread!

Old Fashioned Oatmeal, 25 lb in Sturdy Bucket  10% Off

Why store oatmeal? It is a natural "fast food", can be eaten raw, cooked, or added to foods (cookies, pancakes, breads, meatloaf, muffins, etc). It is ready-to-use and full of healthy fiber. Besides, most everyone loves it. Top with some honey for a delicious meal.

This is old-fashioned (not instant) oatmeal. The whole grain is lightly heated (enzymes are not destroyed) and rolled flat. To cook, just add 1 cup oatmeal to 2 1/2 cups boiling water. Turn heat to low and let simmer for 5-10 minutes. I remarked to my husband that if we just had dry milk, honey and oatmeal, we could probably feed everyone for pennies, without much cooking or much complaining—yum! Beans, Pinto, 25 lb bag 

Nutritious and filling, beans are a mainstay in any food storage program. I add beans whenever I can to salads, soups, casseroles, and more to add nutrition! They can also be ground in your grain mill to make "bean flour" that can be whisked into boiling water to make instant refried beans.

Here's the easy way I cook beans:

Rinse beans and put (any amount of beans) into a pressure cooker. Add water so it stands 3" above the beans in the pot. Put lid on and heat over high heat. When pressure cooker comes to pressure and the pressure cock starts "rocking" steadily, then reduce the heat to medium high (keep it high enough to make the pressure gauge at 15 or the pressure cock rocking) and put your timer on 35 minutes. When the timer rings, run the pan under cold water until the pressure is gone. Open the lid and serve.

You can cook beans on the stovetop by covering with water and boiling gently for up to 2 hours. Soaking overnight beforehand will reduce cooking time.

Dent Corn, 20 lb in Sturdy Bucket 

Dehydrated yellow corn kernals can be ground into fresh, whole grain cornmeal with the germ (not degerminated as found in the grocery store) to be used in cornbread, soup or tortillas. This is not the sweet corn found in cans at the grocery store, but field corn which is a staple grain, and one of the most cultivated crops around the world. Most of the corn crop in the USA is yellow dent corn. It gets its nickname from a depression or dent in the crown of the large kernel. Of the cereal grains, dent corn contains the highest content of carotene (vitamin A). Will store up to 30 years below 75 degrees Farenheit. Raw Honey, 5 lb  10% Off

Raw alfalfa honey, light amber in color. Has not been heated over 110 deg F in processing. The honey may crystalize, or already be crystalized which happens with all raw honey. The honey can be scooped out for use or melted slowly to preserve its enzymes. To melt again, simply place the container (without the lid) in a pan of water warmed over the stove at very low heat. We place several canning lids between the container and the metal pan. Comes in 5 lb plastic jug containers with a screw-top lid.

Honey also has medicinal qualities that make it good for your food storage program. Honey is still used for wound healing today for those who cannot tolerate antibiotic creams. Honey has also been used for centuries as a treatment for sore throats and coughs, and according to recent research may be more effective than most common medicines.* Just mix lemon juice and honey and and take to coat the throat reducing pain and help in healing. A recent study has shown that honey also reduces allergies. **

Grocery store honey has been pasteurized, which cancels its healing properties. Most have sugar or water added to keep the honey free flowing. Raw honey will thicken in time (about 2 months) but it does not effect its properties. It is, in fact, a way that you can be sure you have real raw honey!

Most of our grocery store food today is hybridized, making the seeds non-usable. The Perpetual Garden contains enough seeds to plant more than 3/4 acre. These varieties are easy to grow, non-hybrid, open-pollinated vegetables that have been especially selected. Your unopened seeds should store at least four years (usually much, much longer depending on storage temperature).
