Hard White Wheat 

Ooh, you are in for a treat if you have never used white wheat before! This high protein wheat berry grinds into a light colored whole wheat flour that rises higher and is lighter and tastier than the traditional "red" wheat. Because it is lighter, I have been able to use whole wheat flour for hamburger buns, pizza crust, cinnamon rolls and noodles. Your bread will bake to a delicious golden brown color. Your family will ask if you are baking with white flour again!

The protein content is a high 12-16%. Wheat kernels last wonderfully well, but once ground, the nutritious oils in whole wheat are quickly oxidized by air, so store whatever flour you don't use immediately in an air-tight container in the freezer. Biologically grown, non-GMO.

Hard Red Wheat 

Traditional red wheat is perfect for long-term storage. Will last in storage for 30+ years, so you'll never go hungry. I am baking bread from my storage wheat that is quite old, and the wheat is still fresh and makes fabulous bread!

Old Fashioned Oatmeal 

Why store oatmeal? It is a natural "fast food", can be eaten raw, cooked, or added to foods (cookies, pancakes, breads, meatloaf, muffins, etc). It is ready-to-use and full of healthy fiber. Besides, most everyone loves it. Top with some raw honey for a delicious quick meal.

This is old-fashioned (not instant) oatmeal. The whole grain is lightly heated (enzymes are not destroyed) and rolled flat. To cook, just add 1 cup oatmeal to 2 1/2 cups boiling water. Turn heat to low and let simmer for 5-10 minutes. I remarked to my husband that if we just had dry milk, raw honey and oatmeal, we could probably feed everyone for pennies, without much cooking or much complaining—yum! Spelt  40% Off

I like spelt, an important staple in parts of Europe from the Bronze Age to medieval times. Spelt is an ancient grain that resembles wheat, but with a nuttier and slightly sweeter flavor than whole wheat, and contains more protein than wheat. Spelt protein is easier to digest than wheat protein, so many people can tolerate spelt products even if they are allergic to regular wheat products. Spelt has less calories, but more niacin and riboflavin than wheat. I like to add spelt to my diet as a break from wheat, plus it has unique nutrition that makes it a quality food!

Use spelt flour to replace some or all of the whole wheat in your recipes. Spelt can be sprouted to add to soups or salads. It can also be milled into flour and made into muffins or bread. Use my favorite bread recipe with this modification: knead the bread dough gently (by machine on the lowest setting) for just 5 minutes. The bread dough will feel like silly putty (sorry, that's the best description I can come up with!) Continue with the recipe and your end result will be delicious nutty tasting spelt bread. Dent Corn 

Dehydrated yellow corn kernels can be ground into fresh, whole grain cornmeal with the germ (not degerminated as found in the grocery store) to be used in cornbread, soup or tortillas. Pinto Beans 

Nutritious and filling, beans are a mainstay in any food storage program. I add beans whenever I can to salads, soups, casseroles, and more to add nutrition! They can also be ground in your grain mill to make "bean flour" that can be whisked into boiling water to make instant refried beans.

Here's the easy way I cook beans:

Rinse beans and put (any amount of beans) into a pressure cooker. Add water so it stands 3" above the beans in the pot. Put lid on and heat over high heat. When pressure cooker comes to pressure and the pressure cock starts "rocking" steadily, then reduce the heat to medium high (keep it high enough to make the pressure gauge at 15 or the pressure cock rocking) and put your timer on 35 minutes. When the timer rings, run the pan under cold water until the pressure is gone. Open the lid and serve.

You can cook beans on the stovetop by covering with water and boiling gently for up to 2 hours. Soaking overnight beforehand will reduce cooking time.

Natural Brown Rice
