Heart Pancakes

Start the day off with something nutritious and sweet!
Whole Wheat Heart Pancakes
2 1/2 cups whole wheat flour, freshly ground
1/2 teaspoon salt
1 teaspoon baking soda
2 eggs
2 1/2 cups buttermilk or sour milk
Mix together flour, salt and soda in a large bowl. Make a little hole in the center of the flour and add eggs and milk. Mix gently, as overmixing will develop the gluten and make tough pancakes. Batter will still be lumpy but don't worry! Pour onto pancake griddle in a heart shape. Let bake until bubbles form and pop, then turn over just once, and don't smash it down with the turner! (We want these to be light, right?) Very delicious and good for you! Serves 6.
Heart Pancake Topping
16 oz. frozen strawberries, unsweetened ( or mixed raspberries and strawberries)
1 small carton whipping cream
honey or other sweetener (maple syrup or stevia)
Thaw whole unsweetened strawberries on the counter overnight. In the morning, smash with a potato masher until a chunky sauce is formed. Whip cream. Add honey to sweeten. Fold whipped cream gently into strawberries until it turns pink. Serve on pancakes.
